RECIPE
Total Cook Time: 0 Minutes | Makes 4 servings
Ingredients:
Stuffing—
1 cup barley, cooked
8 spring roll rice paper wrappers
1 carrot, julienned
1 cucumber, julienned
1 red bell pepper, julienned
A handful of cilantro
Peanut dipping sauce—
1/4 cup salted smooth nut butter
1 tablespoon soy sauce
1 tablespoon maple syrup
2 tablespoon lime juice
1 teaspoon sriracha (or your preferred hot sauce)
water, to thin
Instructions:
Cook barley according to package instructions.
Stir all the ingredients for the dipping sauce together. Place in a serving bowl and set aside until ready to serve.
Assemble spring rolls!
