Recipe 3 - Creamy Spicy Peanut Butter Noodles

Plant-based and packed with flavour, you can even use wholegrain noodles of your choice to level up the health factor. (Try: brown rice noodles or quinoa noodles or even buckwheat soba noodles)
RECIPE
Total Cook Time: 8 Minutes | Makes 1 serving
Ingredients:
1 serving of dried noodles, cooked
1 cup broccoli florets
Creamy Spicy Nut Sauce
1 tablespoon smooth peanut butter (or Tahini or any other nut/seed butter)
1 teaspoon light soy sauce
1 clove garlic, minced
1 tablespoon of your preferred hot sauce
1 tablespoon chopped roasted peanuts
¼ cup of hot water, to thin
Instructions:
Mix all the ingredients for the sauce together in a serving bowl.
Bring a pot of water to boil. Blanch the broccoli, drain and dip into cold water to retain its fresh green colour. Set aside.
Cook noodles according to package instructions. Once cooked, scoop the noodles directly from the pot into the serving bowl with the sauce.
Stir until all the noodles are fully coated.
Top noodles with broccoli. Enjoy.
