Recipe 9 - Delightful Dukkah
Dukkah is a flavourful fusion of nuts, herbs, seeds, and spices. Sprinkle this spice blend topping on soups, salads, eggs, avocado toast, sautéed veggies, or anything to give it an earthy flavour and yummy crunch! Or mix it with olive oil and use it as a dip.

RECIPE
Total Cook Time: 10 Minutes
Ingredients:
2 tbsp sunflower seeds
½ cup walnuts (or hazelnuts)
⅓ cup almonds
1 tsp fennel seeds
1 tbsp cumin seeds
1 tbsp ground coriander
1 tbsp paprika powder
3 tbsp roasted sesame seeds, white
2 tbsp roasted sesame seeds, black
1 tsp sea salt
Instructions:
Gently toast the walnuts, almonds and sunflower seeds in a pan. About three minutes will do it. Set to cool. Pop them into a blender. We’re looking for a nice crunchy mix here, not nut butter.
Next, toast the fennel, cumin, and coriander until fragrant—about 2 minutes.
Add the toasted spices into the blender with the nuts and press the pulse button a couple of times.
Finally, add the sea salt, black & white sesame seeds, and paprika. Please give it a last quick blend, or until the mixture is broken into a coarse, sand-like texture (don’t overdo it!).
Store it in an airtight container. Done!
